 Post subject: Elaina & Paden's Ribbon-Winning Carrot cake

Elaina & Paden Weston Rossi entered a carrot cake in our Eagle 4-H Sweet Treats Contest. It was delicious and of course won a ribbon!! As promised in the November newsletter here is the old family recipe...Beware!! You may be tempted to eat a LOT!!

Carrot Cake
4 eggs
2 c.sugar
2 c. sifted flour
2 tsp. soda
3c. carrots, grated
1/4 cup chopped pecans
2 tsp. baking powder
2 tsp. cinnamon
1 1/2 c. cooking oi


Break eggs & beat until fluffy. Add sugar & beat until creamy. Sift flour, soda, baking powder & cinnamon all together & add sugar & eggs. Beat well, adding nut, oil and carrots. Pour into three well greased 9 inch layer pans & bake at 350 degrees for 30 minutes or until done....

Icing!
1 stick of margarine
1 8 0z. pkg. cream cheese
1 1/2 boxes of powdered sugar
1 tsp. vanilla
1 cup chopped pecans or decorate with pecan halves


Blend margarine & cream cheese until creamy. Add powdered sugar a little at a time. Add vanilla & nuts. Blend well. Put between layers & on top & sides of cake.
